Good, but need to perform for years to come.
I got my oringal knives quite sharp with a whetstone however they were poor quality and did not hold the edge very long. Before purchase I did a lot of research and it was hard to find good information but ended up coming to this set as an affordable entry into the higher end market. The knives present very well and the size offset between the two work well to ensure most jobs are covered. The blade is very thin which is what I was after, however the out of the box sharpness, which I expected to be outstanding, was only really satisfactory. My original low end knives were just about as sharp after some elbow grease on the whetstone. In spite of this I’m not disappointed with the purchase as I believe these knives will hold their edge for an extended period of time and will sharpen up well on the whetstone.
Great knives
I had been looking for new knives for quite some time. I found this Miyabi set on Appliances Online. I kept shopping around but couldn’t find a better price anywhere else. I ordered them and they arrived the next day. The knives handle so well, they are balanced and they make chopping such a pleasure. I definitely recommend them.
