If you do not have a vent for the gasses to exhaust then you have no option outside of elaborate filtering, which sort of works but not really. Thus you have a fan with some filtration that uses air flow to mop up some of the cooking smoke and smells. It is noisy because it has to be and does what it is supposed to. It also looks really nice and the cabinet makers were able to blend it in seamlessly; consolidation form over function. Posh innit?
